In the mood for spring food

The time of year has come where the days are getting longer, the weather is (finally) warmer and school is coming to another close. It is also the time of the year where spring and summer fruits, vegetables and meals have arrived.

With the semester coming to an end, it is no wonder that stress levels are rising among students. Instead of going for those chips in the vending machine or that extra side of fries, try something different.

If you are on campus, head over to the caf for some in-season fruit like watermelon, honeydew, cantaloupe, blueberries or strawberries. If you are looking to cook at home, try grilling up corn in the oven (but do not leave the oven unattended). Check out these easy food ideas that you can try in your residence hall or apartment with just a few cooking utensils:

· Breakfast – Fruit salad, parfait, smoothies

· Lunch – Pasta salad, caprice salad, avocado salad

· Snack – Mango salsa and chips, fruit kabobs, crackers and hummus

· Dinner – Tacos, burritos, campfire potatoes (done with foil and in the oven)

· Dessert – Fruit pie, fruit kabobs
